You’ve heard of Taco Tuesday, but this week the love extends to Wednesday. That’s because today, October 4, is National Taco Day in the United States. Americans have reason to celebrate – last year, we ate more than 4.5 billion tacos! That’s 490,000 miles of tacos, or 775 million pounds of the Mexican favorite.

Of course, we’re partial to building our own, healthier taco, and it’s easy to do this at home. Just start with corn or whole-grain tortillas and layer on some of these favorite flavor combos:
Grilled fish with shredded cabbage, cilantro and yogurt sauce: Mix a bit of smoky adobo sauce (from canned chipotle chiles) into Greek yogurt for a spicy topper to this healthy taco. You’ll glean healthy fats from the fish and extra protein from the Greek yogurt, not to mention fiber, antioxidants, and a list of important vitamins from the cabbage.
Chicken with lettuce and guacamole: Use leftover chicken breast, chopped lettuce, and either sliced avocados or your favorite guacamole to make this tasty handful. You’ll enjoy lean protein from the chicken, and those avocados are an amazing source of heart-healthy fats!
Black bean with cheese and pico de gallo: Beans are high in fiber and a good source of protein, while pico de gallo offers plenty of antioxidants from those tomatoes, peppers, and onions. If you’re concerned about saturated fat, try a light sprinkling of low-fat cheese to impart flavor without blowing your healthy eating plan.
